Why is Erfoud called the fossil town?
Erfoud sits on marine limestone that was seabed 350-400 million years ago, so the surrounding hills are packed with fossilised ammonites, orthoceras and trilobites. Local workshops cut and polish this stone into black tables, sinks, bowls and platters flecked with pale spirals. A short factory visit is usually free and genuinely worth it: you watch the diamond saw open a raw block and see the fossils appear, then the slow hand-polishing. Small polished ammonites cost a few euros, while a decorated slab or sink can run from tens to a few hundred euros depending on size, so it is a place to bargain calmly. Erfoud is a practical base too, with hotels, an ATM or two, fuel and a pharmacy, and its date festival each October is a lively time to pass through.
What makes Rissani worth a stop?
Rissani is older and more atmospheric than Erfoud. It stands on the ruins of Sijilmassa, a medieval caravan city that once controlled the gold and salt trade across the Sahara, and it is the ancestral home of Morocco’s ruling Alaouite dynasty. The Moulay Ali Cherif mausoleum and the crumbling Ksar Abbar are easy to visit. The real draw is the covered souk, held every Sunday, Tuesday and Thursday, where farmers trade dates, livestock and hardware and the donkey “car park” at the edge of town says everything about desert life. If you can, try a Madfouna, the stuffed flatbread often called Berber pizza, filled with spiced meat, onion and almonds and baked slowly in ash; it is best ordered ahead and shared warm.
Which town should you base in?
If your goal is the dunes themselves, do not overnight in either town: push the final 40-60 minutes to a Merzouga or Erg Chebbi camp and wake up on the sand. Use Erfoud for a comfortable hotel night with more amenities, or Rissani if you want to be closest to the souk and the Sijilmassa history. October to April is the comfortable window, with warm days and cool nights ideal for the dunes; desert nights turn genuinely cold in December and January, so bring a layer. Late September and October add the date harvest and Erfoud’s festival. Avoid June through August, when daytime highs regularly top 45 C and midday sightseeing becomes punishing.
